The Dessert That Made Me Believe Apples and Wine Should Date Exclusively
A March of Salty from the concert hall · spice map below
Movement Notes
I have a theory that most fruit desserts are just fruit trying to be something it's not—apples pretending to be pie filling, berries masquerading as cobbler material, bananas putting on a show in bread form. But this tart doesn't ask the apples to be anything other than themselves; it just gives them the most spectacular stage possible and lets them shine. And what a stage it is: puff pastry that's been baked until it's golden and shatteringly crisp, topped with thin apple slices arranged in a pattern so pretty it feels almost rude to eat, and then—here's the wild card—a glaze made from red wine jelly that stains everything a deep, jewel-toned purple and makes the whole thing look like it was crafted by a pastry chef who's also a Renaissance painter. The red wine jelly deserves special attention because it's the kind of component that sounds intimidating but is actually just red wine simmered with sugar, jam, star anise, cloves, cinnamon, and vanilla until it reduces into something thick and syrupy and incredibly aromatic. You strain it into a jar and suddenly you have this magical crimson condiment that would make toast feel fancy, let alone a delicate French tart. The apples get peeled, cored, and sliced so thin they're practically translucent, then laid over the pastry in concentric circles that overlap like roof tiles on a very delicious house. A sprinkle of sugar, a trip to the oven, and twenty minutes later you've got something golden and bubbling and fragrant. The wine glaze gets warmed and brushed over the top, giving the tarts a glossy sheen that catches the light like stained glass. Serve with a cardamom-scented cream that adds a floral, slightly exotic contrast to the sweet apples, and watch your guests try to figure out how something so elegant came from your kitchen and not a Parisian patisserie.
