When Churros Get Dressed Up and Go to the Fancy Party
A Scherzo of Sour from the concert hall · spice map below
Movement Notes
I have a deep and abiding love for regular churros, the kind you get at a street cart while walking around with powdered sugar on your jacket and not caring even a little bit. But then I met their fancy cousin, the chocolate churro with chocolate and salted caramel sauce, and it was like finding out your fun friend from college secretly comes from royalty and has a yacht. These churros are chocolate through and through. The dough itself has cocoa powder folded right in, so instead of that classic golden exterior, you get these dramatic dark sticks that look like they should be served on a velvet pillow by someone wearing white gloves. When they hit the hot oil, something magical happens. They puff and crisp and become these hollow tubes of crunchy chocolate intensity that shatter slightly when you bite in, releasing a faint puff of cocoa-scented steam that makes everyone around you lean in closer. And then there are the sauces. Not one sauce, because that would be reasonable, but two. A salted caramel that walks that perfect line between sweet and borderline savory, and a chocolate sauce so glossy and thick you could probably use it as spackle in a pinch. You dip the churro in one, then the other, and somehow this is not excessive because everything about this dessert has already committed fully to being over the top. Making these at home requires a bit of courage, specifically the kind of courage that involves carefully piping dough into hot oil while reminding yourself that you have fire insurance. The first few churros might come out looking more like abstract art than elegant pastry, but they will still taste incredible, and nobody judges ugly but delicious in the world of fried dough. Serve these at a dinner party and watch your guests lose their composure entirely. It is a beautiful thing.
