The Salad That Has No Interest in Being a Regular Salad

Movement Notes
Let us be honest about salads for a moment. Most of them are perfectly nice and entirely forgettable, the culinary equivalent of a handshake. Chorizo and soft-boiled egg salad is not that. This salad does not want to make small talk. It wants to have a real conversation, possibly about politics, possibly about your ex, definitely about why you have been eating boring salads for so long. The foundation is warm potatoes, those waxy little fellows cooked until just tender and then tossed while still steamy so they absorb every drop of dressing like eager little sponges at a flavor seminar. Then come the green beans, bright and snappy, adding crunch and color and the faint suggestion that you are eating something healthy, which you are, sort of, if you squint. The chorizo is where things get interesting. Sliced and crisped in a pan until the edges curl and the rendered fat creates a slick of spicy orange oil that would make a shoemaker jealous. That oil becomes the dressing. You fry garlic in it, add a splash of sherry vinegar and some parsley, and suddenly you have a vinaigrette that no bottle on any shelf could ever compete with. And then, the piece de resistance, the soft-boiled eggs. Cut into quarters, their golden yolks spill out in a slow, luxurious cascade that mixes with the potato and the dressing and creates this velvety coating over everything that is frankly indecent for a lunch dish. This is a salad you eat with a fork and knife and possibly a piece of bread to sweep up the remnants. It is filling enough to be a full meal, interesting enough to be the topic of conversation, and photogenic enough that you will pause before your first bite to take a picture, which your friends will appreciate even though the photo will not capture half of how good this tastes.
