Movement Notes

There are comfort foods, and then there is the British fish pie, which is less of a meal and more of an emotional experience wrapped in mashed potatoes. I made this on a day when the weather was doing that thing where it cannot decide between rain and gloom, so it just goes with both, and let me tell you, this pie understood the assignment perfectly. You start by boiling potatoes and mashing them with olive oil until they are silky smooth, which is already a satisfying activity on its own. Meanwhile, you gently poach fish in milk, which sounds incredibly posh but is actually quite easy and makes you feel like you have your life together. The milk becomes infused with fish flavor, and you use that same milk to make a sauce with flour, nutmeg, and cream that thickens into something so luxurious you will want to bathe in it. Then comes the assembly, which is where this dish really shows off. You flake the fish into an ovenproof dish, add grated Jerusalem artichokes because apparently regular potatoes were not enough potato action for this pie, plus leeks, prawns, herbs, and lemon zest. You pour the creamy sauce over everything and give it a gentle stir, trying not to break up the fish pieces while also accepting that some breakage is inevitable and that is okay because perfection is a myth. Then you spread the mashed potatoes on top, use a fork to create peaks because those peaks become crispy and golden in the oven and that is what separates a good fish pie from a great one, and shower the whole thing with Gruyere. Into the oven it goes, and thirty-five minutes later you have a bubbling, golden masterpiece that makes the entire house smell like a cozy British pub. Each spoonful is a symphony of flaky fish, sweet prawns, creamy sauce, and crispy potato. It is the culinary equivalent of someone putting a blanket around your shoulders and telling you everything will be fine.
